These superfood balls are an antioxidant powerhouse of essential proteins, nutrients and minerals making them a perfect option for a healthy snack. Method - Powerballs
- Place all the ingredients in a food processor and whizz for 30 seconds or more, depending on the strength of your processor. If the mixture seems too thick to easily form into balls, add 1⁄4 cup water and whizz again.
- Roll teaspoons of the mixture into little balls using your hands.
Tip: ‘LSA’ is ground linseed, sunflower seeds and almonds — a major nutrient hit!
Method - Coating
- Combine the chia seeds, coconut, almonds and goji berries in a large bowl and give them a good mix-up.
- Roll the balls in your topping mix to coat and place half in the fridge for munching over the next few days, and the rest in a plastic container in the freezer for another time.
