Kids lunchbox idea 3: Quinoa bites

Quinoa bites

2 cups of quinoa cooked

2 eggs

1.5 cups of cheddar

1 cup of broccoli (chopped finely)

½ capsicum (chopped finely)

½ tsp salt & pepper

Dried herbs of choosing



  1. Mix all ingredients in a large bowl
  2. Spray a mini muffin tray with coconut oil spray
  3. Spoon the mixture in to the muffin cup tray and press down firmly
  4. Bake for 15-20 minutes until browned on top


If you don’t have a mini muffin tray, you can bake in a regular sized muffin tray and bake for longer (25 minutes or so).


These are customizable – add whatever veggies your kids like!
