2 cups of quinoa cooked
1.5 cups of cheddar
1 cup of broccoli (chopped finely)
½ capsicum (chopped finely)
½ tsp salt & pepper
Dried herbs of choosing
- Mix all ingredients in a large bowl
- Spray a mini muffin tray with coconut oil spray
- Spoon the mixture in to the muffin cup tray and press down firmly
- Bake for 15-20 minutes until browned on top
If you don’t have a mini muffin tray, you can bake in a regular sized muffin tray and bake for longer (25 minutes or so).
These are customizable – add whatever veggies your kids like!
