From the TCPA kitchen




Love banana bread? Well today, this recipe is for you! A lightened up banana bread that gets its sweetness from bananas and its healthy fats from coconut oil! You can purchase coconut oil from TCPA in store or via our online shop!


3 ripe bananas

1/2 cup maple syrup (or 1/3 cup of  honey or coconut nectar )

3 tablespoons coconut oil, melted

1 tsp vanilla essence

1 1/2 cups spelt flour

1 1/2 teaspoons baking soda

1/4 teaspoon salt

1 tsp of cinnamon

½ tsp nutmeg

3/4 cup pecans (or nuts of your choice)


1 Heat oven to 180°C
2 Oil a loaf pan (or use some baking paper for ease).
3 In a large bowl, mash bananas and mix in the maple syrup, coconut oil and vanilla.
4 In a separate bowl sift the dry ingredients together, adding the nuts last.
5 Combine the wet and dry mixtures and pour into the loaf pan.
6 Bake for 35- 42 minutes. Banana bread will be done when it springs back to the touch.

** Can also be made into muffins, just reduce the cooking time to about 15-18 minutes.
